A California sandwich chain plans to open its first Florida restaurant in South Jacksonville, according to a permit application now under city review.
Sourdough & Co. filed a $274,881 build-out permit for about 990 square feet at 7540 Gate Parkway, Unit 114, inside The Palms at Gate Parkway, the Jacksonville Daily Record first reported.
The chain has no open locations in Florida.
Permit calls for 10-seat restaurant
The permit describes a takeout restaurant with seating for about 10 people, a waiting area and two kitchen areas. Sourdough & Co. would lease ground-floor space in the central Building II of the three-building complex developed by Jacksonville-based Ash Properties.
Jacksonville-based Tenant Contractors Inc. is listed as the contractor. JAA Architecture of Jacksonville is the architect.
Sourdough & Co. sells sandwiches, salads and soups, with a menu of more than 20 sandwich options, including smoked brisket, chicken salad and turkey. The chain serves soups in sourdough bread bowls and also offers cookies, flatbreads and gluten-free wraps.
Chain expands into Florida
The company was founded in 2016, according to Nation's Restaurant News, and converted to a franchise model in 2022. It has grown from 92 locations in August 2025 to 97 open units listed in its 2026 Franchise Disclosure Document, according to franchise research firm Franzy.
Nick Singh, president of parent company World of Sourdough, told Nation's Restaurant News in August 2025 that the chain planned to enter six new states and "double the size of our company by end of" 2026.
That expansion now includes three planned Florida locations. Besides Jacksonville, Sourdough & Co. lists locations coming soon in Miami and Panama City Beach, according to its website.
Ash Properties, which has managed commercial real estate in Northeast Florida since 1979, relocated its headquarters to The Palms at Gate Parkway in June 2024. The complex sits along the Gate Parkway corridor near Interstate 295.
Sourdough & Co. has not announced an opening date for the Jacksonville location, the Daily Record reported.
